
RED CABBAGE, BACON & GOAT'S CHEESE SALAD
This really is a lovely salad that is filling and without huge amounts of added meat protein as we often need to bulk salads up. It takes a bit of time to prepare so I like to do the night before and then you're good to go first thing in the morning.

Ingredients:
100g streaky bacon
1 tablespoon olive oil
2 red onions
2 tablespoons apple cider vinegar
2 teaspoons soft brown sugar
1/2 red cabbage shredded
2 apples, cored and diced
50g toasted hazelnuts
2 tablespoons parsley
100g goat's cheese, crumbled
Salt & pepper
Method:
Fry bacon in the olive oil until crisped and drain onto kitchen paper
Tip onions into the pan along with the vinegar, sugar and pinch of salt
Fry until softened
Add the cabbage and cook for 10 mins until cabbage is soft
Season well and continue to cook for another 5 mins
Leave to cool. Add red rest of the ingredients along with cooked bacon and serve.
