This really is a lovely salad that is filling and without huge amounts of added meat protein as we often need to bulk salads up. It takes a bit of time to prepare so I like to do the night before and then you're good to go first thing in the morning.


  • 100g streaky bacon

  • 1 tablespoon olive oil

  • 2 red onions

  • 2 tablespoons apple cider vinegar

  • 2 teaspoons soft brown sugar

  • 1/2 red cabbage shredded

  • 2 apples, cored and diced

  • 50g toasted hazelnuts

  • 2 tablespoons parsley

  • 100g goat's cheese, crumbled

  • Salt & pepper


  • Fry bacon in the olive oil until crisped and drain onto kitchen paper

  • Tip onions into the pan along with the vinegar, sugar and pinch of salt

  • Fry until softened

  • Add the cabbage and cook for 10 mins until cabbage is soft

  • Season well and continue to cook for another 5 mins

  • Leave to cool. Add red rest of the ingredients along with cooked bacon and serve.
