This dish is a great addition to a salad. I try to use everyday. Lentils are really high in fibre and incredibly good prebiotic to feed your gut bacteria.
Juice of 1 lemon
1 handful of chopped mint
1 handful chopped parsley
4 lugs olive oil
Drain away most of the water from the lentils
Remove from heat and add lemon juice, herbs and 4 good lugs of olive oil. Then season with salt and pepper.
