I love this little recipe. Lamb is very warming and drying for the gut which is a good thing particularly if you suffer with candida or yeast infections. It's one of the recommended foods to increase if you're on a candida cleanse diet. This recipe is very easy and works perfectly with a simple green salad or a greek salad. It's a fun way to eat with kids as they can use their hands.
Lamb kofta kebab ingredients
Makes 6 kebabs
500g organic lamb mince
2 tbsp fresh thyme leaves
1 tbsp ground cumin
Grated zest of one lemon
Salt and pepper
handful of crushed pistachio (I smash whole ones in pestle and mortar)

Put everything into a bowl and scrunch together
Make 6 sausage shapes and mould around the skewers (if you are using wooden ones you'll need to soak in water for 30 mins first)
Grill on medium heat
Serve with flatbreads and greek salad or simple green salad with olive oil and lemon dressing.
It really is that simple and very delicious.
