I love this little recipe. Lamb is very warming and drying for the gut which is a good thing particularly if you suffer with candida or yeast infections. It's one of the recommended foods to increase if you're on a candida cleanse diet. This recipe is very easy and works perfectly with a simple green salad or a greek salad. It's a fun way to eat with kids as they can use their hands.

Lamb kofta kebab ingredients

Makes 6 kebabs

  • 500g organic lamb mince

  • 2 tbsp fresh thyme leaves

  • 1 tbsp ground cumin

  • Grated zest of one lemon

  • Salt and pepper

  • handful of crushed pistachio (I smash whole ones in pestle and mortar)

Lamb kofta kebab recipe

  • Put everything into a bowl and scrunch together

  • Make 6 sausage shapes and mould around the skewers (if you are using wooden ones you'll need to soak in water for 30 mins first)

  • Grill on medium heat

  • Serve with flatbreads and greek salad or simple green salad with olive oil and lemon dressing.

It really is that simple and very delicious.
