MY EGG SUBSTITUTE IN A FRY UP

Updated: Feb 19, 2018

Packed full of nutrients including vitamin C, E and B6 avocados are incredibly good for you. I include 1-2 avocados in my diet every day mainly for good mental health and to get enough B6. Dopamine and serotonin (our happiness creators) need B6 for synthesis, so it's important to get enough, particularly if you suffer from poor mental health or feel run down.

One of my favourite breakfasts is avocado and smoked salmon, which is unbelievably rich in vitamin B12....just over 100g of smoked salmon contains over 200% of our RDA of B12. Salmon is also good for the nervous system and if I'm lacking in either B6 or B12 I tend to get easily confused...like I have full-time #babybrain - I cannot think clearly and don't make much sense!! :)

“B6 vitamin helps your nervous system function properly and it improves moods.”

To get your daily dose of avocado, it's also lovely and creamy in a #smoothie. Here's one of my favourite recipes:

Green goddess smoothie

  • A handful of spinach

  • Half an avocado

  • Tsp spirulina powder

  • 1 Banana

  • Coconut milk

TOP TIP! I'm intolerant to eggs, so I substitute with half an avocado if I'm having bacon and egg for brekkie! If you have a fry-up then the protein punch is pretty much the same!
