HERBY LENTILS
This dish is a great addition to a salad. I try to use everyday. Lentils are really high in fibre and incredibly good prebiotic to feed your gut bacteria. Ingredients: 255g lentils Juice of 1 lemon 1 handful of chopped mint 1 handful chopped parsley 4 lugs olive oil Method: Drain away most of the water from the lentils Heat gently Remove from heat and add lemon juice, herbs and 4 good lugs of olive oil. SALMON WRAPPED IN PROSCUTTIO WITH HERBY SPINACH, YOGHURT & LENTILS
I love this dish for so many reasons. The salmon and omega 3. The spinach and just about very vitamin you can think of. The lentils and their fibre/prebiotic content. I also love it because it's very quick to do and requires little effort or thought. SWEET POTATO & CINAMON BREAKFAST BOWL
Trying to find a nutritious and hearty breakfast can be tricky. I'm currently not able to have too much grains and as I cannot have egg either, breakfasts have become a pain as cereal, porridge and bacon & eggs don't work for me.
